This dish was introduced to me by one of my English teachers. Sopas is creamy and warm, and is often eaten for breakfast. It is a dish similar to Japanese cream stew, but I feel that the use of evaporated milk (unsweetened condensed milk) makes it healthier.
In the cooking process, it takes about an hour to boil the chicken first, but it is a bit troublesome to do so, so I use a chicken that is readily available in Japanese supermarkets, such as

which is to shorten the time!

Filipino Dish “Sopas” Ingredients
- 1 cup evaporated milk※
- 2 packages (equivalent to 200 g) salad chicken
- 1/8 of a cabbage
- 1/2 onion
- 1/2 carrot
- 4 sausages
- 100 g macaroni
- 2 cloves garlic
- 2 bouillon (or consommé) ingredients
- 1 liter of water
- Salt, pepper, oil
In addition to this, celery (1 stalk) is generally used, but I exclude it because I have some members of our family who don’t like it.
※This time, I used snow brand evaporated milk. Although I believe that this product will reproduce a taste closer to the real thing, ordinary milk can be substituted. Evamil is a product made by concentrating milk to about twice its original volume.
By the way, the difference between evaporated milk and fresh cream: Evaporated milk is milk itself concentrated to about twice its original volume. Fresh cream is the fat content separated and collected from milk. Evaporated milk is a dairy product with less fat.
How to make “Sopas”.
Cut vegetables into desired sizes.
It is salad chicken, but the chicken is generally soaked in the broth. This broth is delicious, so don’t throw it away!
Cut the salad chicken into the desired size. I prefer to keep it this large and retain the texture.
Now let’s cook it using a frying pan.
①Heat a frying pan with salad oil and garlic.
②When garlic is fragrant, saute onions, carrots, and sausage.
③Once the ingredients are cooked, throw in the salad chicken as well.
④Pour 1L of water.
⑤Add solid bouillon (consommé is fine).
⑥Don’t forget the salad chicken broth.
⑦Cover and simmer for about 8 minutes.
⑧Add macaroni, cover and simmer (adjust time according to boiling time).
⑨Add cabbage.
⑩Let simmer for 2-3 minutes more.
⑪Finally, add evaporated milk and heat.
⑫Add about 1 teaspoon salt to taste.
▼Adding pepper is also a good idea.
It takes about 15 minutes to cook the whole dish. (about 20 minutes if you include frying)
